Here is a simple and easy vegetable dish to make. Think these would be fun for the kiddo's to eat and you can hide veggie's in them. I found this recipe at Daydreamer Kitchen who found it at Fountain Avenue Kitchen. Thank you both for sharing your Broccoli cups with us. I made them the other night and we both enjoyed them. I decided to make them again today and post to the wednesday baker. It's not a cupcake with sugar today, but a fun side dish to eat.
Ingredients:
1 1/2 to 2 cups of cooked rice
1 (10 ounce) box of frozen broccoli spears, thawed and squeezed dry and cut in small pieces
3/4 cups of shredded cheddar cheese, using 1/4 cup of cheese to sprinkle on top before baking
1/4 cup of Ranch Dressing, (I used 2 cups of rice this time and should of added a little more dressing)
2 eggs, lightly beaten
In a medium size bowl add the 2 eggs and mix them, add the remaining ingredients. Mix all together and spray your muffin tin with Pam spray and spoon the mixture into each tin. I got 11 cups in my cast iron muffin tin. Bake at 350 degrees for about 20-25 minutes.
