PAM'S 50TH BIRTHDAY.....A "BITTERSWEET TIME"

Lemon Velvet Cake

What a great recipe, this Lemon Velvet Cake will amaze all lemon lovers. I first saw this cake on Pinterest and knew that I needed to make this for Pam.  Her birthday was soon approaching and Lemon desserts are a favorite of hers.  

With the help of others we had a surprise 50th birthday party for her.  


Rock Recipes to get recipe   I made the lemon cake as directed but I changed it a bit.  I added a lemon curd in the middle.  I used a box of lemon pudding/pie filling mix "durkee and reduced the water by 1/4 cup and followed as directed on the box.  After the pudding was thick and beautiful yellow. I put the filling in a small bowl and then placed a piece of plastic wrap directly on the pudding and put in the refrigerator overnight. The next morning I squeezed the juice from one lemon and mixed it all together. 
So, lets frost this cake, when frosting the middle of the cake, make a dam with the frosting, around the edge of the cake, this allows the filling to stay in place in the middle and not to weep out when the top layer is placed on top .  Continue to frost the top and sides of the cake.   I used my new and favorite butter-cream icing  that you can get here....that really frosts me.

WICKED PUMPKIN WHOOPIE PIES


Surprise!!! It's not a apple recipe today.  It's Wicked Pumpkin Whoopie Pies from Amy Bouchard who has made a business in Maine selling whoopie pies.  My understanding she started this several  years ago in her home and today her business is growing strong  and sells to many stores in Maine. You can purchase them on line and come home to a box of whoopie pies waiting for you!  Sounds like a good day to me or you could make your own.   Amy has been seen on WCSH channel 6 making Whoopie pies. I've visited her shop in Farmingdale, Maine. So it's time to make some whoopie pies and don't forget the milk!   Enjoy and happy baking, Andi  





PRINT RECIPE

1 (15) ounce can of pumpkin
2 large eggs
1 cup vegetable oil
2 cups firmly packed light brown sugar
2 TBSP molasses
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
3 cups of flour

In a large bowl add the flour, salt, baking powder, baking soda, cinnamon and ginger.  Whisk this together. set aside
In the bowl of your stand mixer add the pumpkin, eggs, oil and brown sugar and mix.   The add the molasses along with the flour mixture.   Mix 

I lined my baking sheet with parchment paper and used my ice cream scoop that holds about 1/4 cup.  I kinda added a bit more than the 1/4 cup.  Then with the back of the spoon I spread the dough in a large circle.  Don't flatten it just spread it a bit.   You can make these big or small.  I got 17 whoopie pies.

Cream Cheese Icing:
6 ounce of softened cream cheese
1/2 stick of softenedunsalted butter
2 cups confectioners sugar
3 heaping tablespoons of fluff
2 tsp water

Mix all together and when the cakes are cooled then line them up so you have a top and bottom that are about the same size and scoop some icing on each of the bottom cakes and continue until all the filling is used then go back and put a "roof" on each one.  Then wrap each in wax paper and store in the refrigerator.  I like these cold.

WiCkeD GooD MAINE WhOOpie PiEs

A New England tradition.......... Wicked good "Maine" Whoopie Pie's... the filling is made with Fluff and that is what a good whoopie pie filling is made with. It's a mystery as to who made the first Whoopie pie, was it orginated in Maine or the Amish of Pennsylvania. To me I am just glad that I grew up with them and that I can make them today.  Check out Yankee Magazine and print off the recipe and directions for baking your own Whoopie pie's.   

Many Mainers grew up with Whoopie Pie's! Comfort food at its best.  I know I did, Mother made these for us as little kids. Vanilla "fluff" filling sandwiched between 2 baked chocolate cakes.     

Did you know that "Whoopie Pie's" are the treat for the State of Maine.   The official dessert for the state is "Blueberry Pie" with the blueberries as the state fruit.   The soft drink for the State of Maine is "Moxie".     


The Yankee Magazine recipe makes 8 servings, and that is one big sized treat.  I made mine smaller so I go a few more and I used the same recipe for the "Fluff" filling and used it all, then I wrapped each pie in waxed paper and stored in refrigerator to keep longer. 



After baking the chocolate pies lay them out in pairs and scoop out the filling on one side of the pair, and use all the filling then spread the filling and place the other on top and wrap each in wax paper.    Life doesn't get much better then this............Enjoy  

I can't wait for the next occasion to make these again.

FAVORTIE DAUGHTER'S WHOOPIE PIES

For you Morgan, my favorite daughter. 

Morgan's Whoopie Pies




5 tbsp shortening
1 cup sugar
1 egg
1 1/2 tsp baking soda
5 tbsp cocoa
2 cups flour
1 cup milk
1 tsp vanilla
Cream shortening and sugar, add egg and mix. Combine all the dry ingredients in a separate bowl and add to the batter alternately with the milk. Using parchment paper and your cookie scoop, scoop out batter and bake at 350 degrees for about 12 minutes.





Whoopie pie Filling
1 cup shortening
3/4 cup of marshmallow fluff
2 cups powdered sugar
2 tsp vanilla
1/2 tsp salt
1/4 cup milk
Mix all together and allow to mix for a while until fluffy. Place a good tbsp of filling between two pies. Wrap in waxed paper and enjoy.
