PEANUT BUTTER GRANOLA BARS

PEANUT BUTTER GRANOLA BARS

I love peanut butter
I think I am eating healthy when I eat granola bars
I have made these twice
I used pecans and baked in a glass 9x13 inch pan the first time
The second time I used cocktail peanuts and baked in a metal 9x13 inch pan
I will make again but will use the glass pan and the pecans, I think they were softer.  Black Jack bake house suggested to use the glass pan

This recipe is from "pinterest" from Black Jack bake house

bakehouse peanut-butter-granola-bars recipe
PEANUT BUTTER GRANOLA BARS

3 cups old fashion oatmeal
1 cup grated coconut (you can use sweetened)
1/4 cup wheat germ
1/4 cup butter
1/2 cup peanut butter
1/2 cup honey
1 cup of Rice Krispies adding some dried fruit to the measuring cup with the Rice Krispies   (I added some dried cranberries)
3/4 cup or so of chopped pecans, nuts
pinch of salt

In a large bowl add the oatmeal, coconut, wheat germ and your choice of nuts.  Mix then place on a rimmed cookie sheet and bake at 325 degress for about 20-25 minutes.  Stir frequently and  bake long enough to toast. My oven runs hot so the oat mixture was only in oven for about 12-15 minutes.  Remove from oven and add back to the bowl and stir in your Rice Krispies, add salt and the dried fruit if using.

In a small saucepan combine the honey and butter and heat till the butter is melted. Then add the peanut butter and mix until the peanut butter is melted and the mixture is smooth.  Pour this over the oat mixture and pour into a sprayed 9x13 inch glass baking dish.  Bake at 350 degrees for about 12 minutes.  Remove from oven and allow to cool.  Cut in squares or break up in chunks.  You can wrap in wax paper and freeze.

APPLE BROWNIES

Apple's are just falling all over the place!  Another apple recipe today.....I still have a few more recipes to try with apples.  Fruit are good for us!  I like my fruit, a slice of zucchini bread in one hand and the other holding a apple brownie!!!!   These brownies are full of bits of apples, they are moist and easy to make.  I doubled the recipe so Mr. Dick took some to work and I took the other half to a meeting at my work.

This recipe is from allrecipes.com I read some of the reviews from others who have made these. Some didn't melt the butter, and if you look at the photo on allrecipes they were baked in muffin pans. The batter is very thick, so use a off set spatula to spread the batter around in the baking dish.   I used about 4 apples for these brownies and some chopped walnuts.

PRINT RECIPE

Apple Brownies from Allrecipes.com

Direction for a 8x8 inch pan, I doubled the recipe for a 9x13 inch pan

1/2 cup butter, melted
1 cup of white sugar
1 egg
3 medium apples, peeled and cut in small pieces
1/2 cup of chopped walnuts
1 cup flour
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon

Heat oven to 350 degrees, grease a 8x8 inch baking dish with butter or spray with PAM.  In one bowl add all the dry ingredients and whisk together.  In another bowl mix the melted butter with the sugar, add the egg and mix again.  Then add the dry ingredients and mix.   Hand stir in the chopped apples and the chopped walnuts. I cut up one apple at a time and then stirred it into the batter and kept adding until I had a good amount of apple pieces.   Spread in a 8x8 inch greased pan and bake for about 35 minutes at 350 degrees.
Enjoy

CHOCOLATE CHIP CHEESECAKE BARS

Just because I haven't done much posting on the blog this summer, I have been cooking and baking.  Then I eat and walk the ball park to make myself feel better for eating that cookie........  I have across the street a recreation area.  Three trips around is a mile.  So I walk and eat a cookie?????  I made these Chocolate Chip Cheesecake Bars and they were gone in no time.........I found this recipe at Mommy's Kitchen and Pinterest.  I made the cookie base but you can also purchase cookie dough in the dairy section of the market.  Enjoy and happy baking,  Andi

Chocolate Chip Cheesecake Bars
1 cup brown sugar
1 cup sugar
1/2 cup room temperature butter
1/2 cup oil
2 eggs
1 tsp baking soda
1 tsp salt
1 tsp baking powder
1 tsp vanilla
3 cups flour
12 ounce bag of chocolate chips
Mix the sugars with the butter and the oil, add the eggs and mix.  In another bowl combine all the dry ingredients and whisk together to combine all the dry ingredients.  Add the dry mixture to the sugar mixture and mix.  Add the chocolate chips and stir with a wooden spoon.
Prepare a 9x13 inch baking pan with spray Pam.  Press half of the cookie mixture in the bottom of the pan.  Using your fingers press the dough to cover the bottom of the pan.  Bake this at 350 degrees for 10 minutes.
In a small bowl combine 2 (8 ounce) packages of cream cheese, (I only used one) 1 egg, 1/4 cup of sugar and 1/2 tsp of vanilla.  Mix this well, and when the 10 minutes is up remove the pan from the oven and spread this cream cheese mixture on top.  Spread this mixture to cover the entire cookie base.   Then you are going to take small pieces of the remaining dough and cover the entire top of the cream cheese.  Try using the smallest pieces of dough so that you will have enough to cover the cream cheese.   Bake for 35 minutes at 350 degrees or until a toothpick inserted in center comes out clean.    Cool in the refrigerator for a few hours before cutting in squares.   This dessert needs to be kept in the refrige because of the cream cheese.

ZUCCHINI BROWNIES

This recipe for these wonderful brownies was found at  allrecipes. Can you see any zucchini in them? Can't see the zucchini and you can't taste the zucchini. Told ya! They are fudgy, very chocolate and yummy...and moist......They were a big hit and they will be a keeper.
Happy baking, my friend. Andi

Zucchini Brownies

1/2 cup vegetable oil
1 1/2 cups sugar
2 tsp vanilla extract
2 cups flour
1/2 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1 tsp salt
2 cups shredded zucchini
1/2 cup chopped walnuts

Icing:

6 TBSP unsweetened cocoa powder
1/4 cup butter
2 cups confectioner's sugar
1/4 cup milk
1/2 tsp vanilla

Preheat oven to 350 degrees. Prepare a 9x13 inch cake pan with grease and flour. set aside

Shred the two cups of zucchini and allow to set and sweat . This will provide the moisture that is needed for the dry ingredients.

In a large bowl add the oil, sugar, vanilla extract and mix.

In another bowl add the flour, cocoa powder, baking soda, and salt. Mix this with a spoon to combine the dry ingredients.

Add the flour mixture to the wet mixture and mix to combine.

Don't panic it is dry, very dry but then add the zucchini and nuts and fold this into the mixture and it will produce a thick wet batter.

Pour this into the prepared 9x13 pan and bake for about 25-30 minutes. Mine was done in 23 minutes. The brownies will spring back when gently touched.

Prepare the frosting in a medium bowl and allow the brownies to cool then spread with the frosting. Cut in squares and store them  in the fridge.

DOUBLE CHOCOLATE BROWNIES

Another Christmas goodie.  These little  brownies are home made but you could use a brownie mix and do the same thing.  But, the recipe is very easy and you'll get a chocolate, moist thick brownie.  I like homemade brownies.  And this is a keeper for me.  I got 15 brownies with the circle and the christmas tree cutter, and Mr. Dick got all the brownie leftovers.  I love this magazine.  I am going to send in for the subscription to this.  Why not, after all its Christmas.    Happy baking everyone and a very Merry Christmas to you all.

Double Chocolate Brownies

hoffmanmedia

1 cup softened butter
1 cup sugar
1 cup firmly packed light brown sugar
4 large eggs
1 tsp vanilla
1 cup ap flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 cup semi-sweet chocolate morsels, melted and cooled
Cookie icing and sprinkles

Preheat oven to 350 degrees

Spray a 13x9 inch baking pan with non stick baking spray with flour. I line the baking pan with parchment paper and allow it to overhang on both ends and spray the paper also. This gives you ability to lift the entire brownie out of the pan so that you can cut them in the desired shape. Allow the brownies to cool completely in the baking pan before removing them. You don't want the brownie to break in the process of moving a hot brownie.

In a saucepan, add the chocolate chips and allow to melt. I placed the chocolate chips in a cereal bowl and placed on a baking sheet and put in the oven while it was preheating. It only needs to be in the oven for a few minutes to softened, remove then stir.  Allow to cool.

In a large bowl add the butter and mix on medium high speed until fluffy. Add the sugars and continue to beat at medium speed with mixer until fluffy. Add the eggs one at a time and beat well. Add the vanilla and mix in.

Sift the flour, cocoa powder, baking powder and salt. Then add this to the butter mixture and mix well. Add the melted chocolate and mix again.

Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in the center of the brownie comes out clean.. ALLOW TO COOL COMPLETELY IN PAN before lifting out.

Using a three inch biscuit cutter or any cookie cutter you desire. Make a thin icing with powdered sugar, milk and a little vanilla. Swirl the icing on top of each cut out shape and sprinkle with your choice of confetti. Use gum drops for the top of the round balls,  a piece of candy cane for the tree trunk. Enjoy

CAKE BATTER CRISPY TREATS

I recently spent the day in Cornish, Maine for the Apple Festival day in the park.  I purchased one of these Rice Krispie Treats from a table selling homemade sweets for a benefit. The gal was telling me about them, what the ingredients were and she had seen them on Pinterest.  Well, you've got my interest so I had to find the recipe.  They really do taste like cake batter.  Try using any flavored cake mix.  Why not make them coordinate with a holiday.   I added the icing on top and loaded them with sprinkles.

Cake Batter Crispy Treats

howsweeteats

3 tbsp butter
1 10-ounce bag of mini marshmallows
1/2 cup of dry cake mix
6 cups of rice krispies cereal
1 1.75 ounce container of sprinkles

Melt the butter over low heat in a large saucepan. Add the marshmallows. Stir this mixture until the marshmallows begin to melt, add the cake batter a little at a time and keep mixing. Stir in the cereal and stir with all your might......until the cereal is coated. Remove from the heat and sprinkle in half of the sprinkles. Press this into a greased 8x8 or whatever size pan you want to use. The smaller the dish the taller your treats will be. I added a little chocolate icing and loaded on the sprinkles. Enjoy

SRC CHEWY CHUNKY BLONDIES

Secret Recipe Club is upon us again for the month of September.  I got so much enjoyment looking around Lynn's Blog, it is a must look at. She had so many recipes I didn't know where to start.   Her photography is beautiful, mouth watering, and done with style and class.  I ending up making the Blond Brownies, that was made with her group of "Tuesdays with Dorrie".  These brownies are delicious, a thin layer of crunch on top, the chocolate, pecans and coconut.  I thought the recipe I had on my blog for Blonde Brownies was good but it's not as good as these.  This recipe is a make again for sure.  I think I will remove my post and replace it will these!  I also made from Lynn's blog Teddy Bears Breads, and Italian Meatballs with Spaghetti which we had for dinner one night, then I froze some of the meatballs and made meatball sandwiches another night.  So good,  I am so excited to work off her blog this month. All three recipes that are approved by me!   Happy Baking everyone..........................Andi

Teddy Bear Bread  from Simple Sweet Dough

Lynn's Spaghetti and Meatballs

Chewy Chunky Blondies

2 cups flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 sticks unsalted butter, at room temperature
1 1/2 cup packed light brown sugar
1/2 cup sugar
2 large eggs
1 tsp vanilla
6 ounces of bittersweet or semisweet chocolate, chopped into chips or 1 cup store bought chocolate chips
1 cup butterscotch chips or Heath Toffee Bits
1 cup coarsely chopped walnuts or pecans
1 cup sweetened shredded coconut

Preheat oven to 325 degrees. Butter a 9x13 inch baking pan and place on a larger rimmed baking sheet. Center the oven rack to the middle of the oven.

In one bowl combine the flour, salt, baking powder and baking soda. Whisk this together to combine all the ingredients.

With your stand mixer, add the butter and mix. Then add the light brown sugar and mix for about 3 minutes. Scrape bowl to combine the ingredients. Add the large eggs one at a time, mixing well after each egg. Add the vanilla. Carefully at a lower speed on the mixer add the dry ingredients, mixing only enough to incorporate the flour mixture. Hand stir in the nuts and the chocolate pieces and the shredded coconut. Scrape the batter into the buttered pan and using a off set spatula to even the top of the bars.

Bake for about 40 minutes, or until a knife inserted into the center of the blondies comes out clean. The blondies may start to pull away from the side of the pan and the top should be a nice golden honey brown. Remove the baking dish from the baking sheet and place on a cooling rack to cool. Cut into squares. Happy Baking, Andi
