HOOSIER AMISH CAKE


Hoosier Amish Cake

I was looking thru some recipes yesterday and found this coffee cake which I had printed off on October 4, 2014.  I had all the ingredients needed so I decided to give it a try.  It's made with brown sugar and my favorite buttermilk.   Glad I didn't throw it away.   The recipe is from



Recipe for Hoosier Amish Cake

1 cup butter room temperature 
2 cups light brown sugar
2 cups buttermilk 
2 teaspoons baking Soda
3 cups all purpose flour 
1 teaspoon vanilla
1 teaspoon cinnamon 

Topping:
6 tablespoons soft butter
2/3 cups brown sugar
2/3 cups flour

Mix all the topping ingredients together in a small bowl.  

Cream the butter and the light brown sugar in a large bowl until well blended.  Add the buttermilk and the baking soda and mix.   Then add the flour, vanilla and cinnamon and mix just till blended.   Prepare a 9 by 13 inch baking pan, spray with Pam spray and line your pan with a piece of parchment paper and lightly spray the paper.  Spread all the batter in the pan and use a off set spatula to even out the batter.  Then sprinkle the top with the topping ingredients.   Bake at 350 degrees for about 40 minutes.   Allow to cool and serve warm or at room temperature.

DRAKE'S COFFEE CAKES

Many years ago, I took my lunch to school everyday because I was such a fussy eater.  And everyday I ate the same thing,  tuna fish sandwich on white bread, a carton of milk which I purchased at school, celery sticks and a Drake's Coffee Cake or a Devil Dog.  I ate the same thing 5 days a week.  

So, that brings us to this post.   When I saw these coffee cakes on buttercreamfanatic I knew I had to try them.........Look at all those crumbles on top. This recipe is so close to the original "Drake's."  This is a keeper. They returned me to seventh grade lunch room!  I will be adding this recipe to my collection.  A big thank you to Nora for making and blogging about "Drake's" Coffee cakes.

BUTTERY CINNABUN CAKE

Hello to all my readers, you are missing out if you don't make this.  This coffee cake is the best, its buttery, and cinnamon and served warm all googy and wonderful.  I think this will be my new go to cinnamon roll. It is so good.  I'll be right back I am going to make another one.... Found this on "Pinterest"  addiction page. Made by Jenny from picky-palate, she made this back in September 2007. So, its been around for awhile but new to me and I am sharing with you.  Hope you enjoy and happy baking my friends.  Andi



Cake batter:
3 cups flour
1/4 tsp salt
1 cup sugar
4 tsp baking powder
1 1/2 cups milk
2 eggs
2 tsp vanilla
1 stick of butter, melted

Cinnamon mixture for the cake:
2 sticks butter, softened
1 cup light brown sugar  
2 TBSP flour
1 TBSP cinnamon
2/3 cups nuts, optional

Frosting mixture:
2 cups powdered sugar
5 TBSP milk
1 tsp vanilla
Prepare a 9x13 inch baking dish with Pam spray and flour this.  Set aside
Preheat oven to 350 degrees.
In a large mixing bowl add the dry ingredients for the cake batter and whisk this together, then add the milk, eggs, vanilla and mix.  Melt the butter and hand mix this into the cake batter.   Don't overmix.  Pour this batter into your prepared baking dish.  
In a bowl add the cinnamon mixture and mix with the electric mixer.   Drop tablespoons of the cinnamon mixture over the top of the cake batter, then using a knife make a swirling effect to marble thru the batter.    Bake at 350 dgrees for about 25-30 minutes.  Bake until toothpick comes out nearly clean from the center of the cake.   
Allow to cool a bit then drizzle the icing over the warm cake.  Serve warm or at room temperature.
