SPRITZ COOKIES

Cookies for Santa,  I know I just posted butter spritz cookies,  but these are a different recipe.   I fell in love with these melt in your mouth Spritz cookies.  I knew the minute I saw the ingredients that I would be crazy for them, and sure enough I am!    The Butter Spritz are good, but I like these a little more. I would never lie when it comes to cookies! They are made with confectioners sugar and they are the best.

So what do you think of Santa?  He's made out of a funnel by the Maine artist Auntie M.  He sits on top of my christmas tree in the kitchen.  Auntie M is a tole painter.  I've had a lot of fun and laughs with her over the years.

I found the recipe for the Spritz cookies in a cookbook by the food editors of Farm Journal.  Its called Homemade Cookies published 1971. My collection of the Farm Journal books includes about 8 books so far, and I keep looking for more of the other books that they have published.

1 cup butter
2/3 cup of confectioners sugar
1 egg
1 egg yolk
1 tsp almond extract or vanilla extract OR 1/4 cup grated almonds
 2 1/2 cups sifted flour
In a bowl add the butter, sugar, egg, egg yolk and the flavoring of choice.  Mix this and add the flour and mix gently.   DO NOT chill the dough per the manufacturer directions of the cooky press.  Place about 1/4 of the dough into the press and press about 1 inch apart on a ungreased cookie sheet.  Sprinkle with colored sugars if desired.  Bake at 400 degrees til set but not browned about 7-10 minutes.  Remove to a cooling rack.  4 -6 dozen cookies depending on the size you make.

Happy baking   Andi

  1. I made the mistake of making butter cookies with margarine one year, and it was horrible. Butter all the way, I say!
