ONE POT CREAMY CHICKEN & NOODLES

I love pasta
I love one pot meals
I love this dish of Creamy Chicken & Noodles 

It is comfort in a bowl 
Great for a cold winter night
I saw this on Pinterest and knew this was a dish that I was had to try.   You can see this from yellow bliss road and print off the recipe. Her photo's will have you drooling.  Take a look.   Enjoy 


I cut myself short of the veggies, next time I will add more, she calls for 2 cups total and I didn't have the 2 cups but it still was pretty good!!! I added the mushrooms as extra



Creamy Chicken and Noodles

2 large or 3 small boneless chicken breast (cut in bite size pieces)
2 TBSP olive oil
2 cups of roughly chopped raw vegetables (mushrooms, celery, carrots and onions) 
1 TBSP minced garlic
salt & pepper
1 can of cream of chicken soup
1 soup can of milk
2 cups of chicken broth ( I used chicken stock)
1 TBSP dried parsley
1 tsp dried thyme
1 tsp garlic powder
1/2 pound of broken dry fettuccine pasta  
1 cup of shredded cheddar cheese plus 1/2 cup to sprinkle over the top  ( I only used the 1 cup of cheese)

HOW TO MAKE THIS:
heat the oil in your dutch oven
Add the chopped vegetables and the garlic and saute' over medium high heat for about 5 minutes  or til the vegetables are almost tender
add the chicken along with the salt and pepper and continue to saute until the chicken is no longer pink in color
add the soup, milk, broth or stock, the broken dry pasta and the seasonings 
Stir and bring to a boil and then turn to low and cook for about 20-25 minutes or til pasta is tender.  Stir often to keep the pasta from sticking to the pot
add the shredded cheese and stir
cover and remove from heat and let sit for 5-10 minutes before serving.
