Auntie Ella's Meatloaf from the back woods
 
Good comfort food, and who doesn't like meatloaf. I baked these in large muffin pans.  The cooking time is reduced and portion controlled.  And dinner on the table fast.  The topping is sweet and a good meatloaf recipe.  Thank you Auntie Ella



2 eggs
2/3 cup milk
2 tsp salt
1/4 tsp pepper
3 slices of bread
1 onion chopped
1 cup shredded cheddar cheese
1/2 cup shredded carrot
1 1/2 pounds ground beef
In a large bowl add the bread which you have cut in thin slices and pour the milk over this. Allow this to set for a little while to soak up the milk.  Then add the remaining ingredients  and mix together. Place in a loaf pan or casserole dish.

Topping:

1/4 cup brown sugar
1/4 cup ketchup
1 tbsp dry mustard  (I cut back on dry mustard)

Mix all these ingredients together and spread on top of meatloaf.
Bake at 350 degrees for 1 to 1 1/2 hours.
