RASPBERRY BUTTERMILK CAKE

My most favorite fruit, raspberries.  While living in Alaska many years ago we would pick hugh red raspberries.  They were plentiful, along with a possible bear!  You always need to be aware of your surroundings.  We would pick tons of these wonderful berries and freeze them.  We always had fruit in the freezer.  This is a fast, easy and quick dessert to make.  It is a small cake,  servings about 6.   I would serve this warm from the oven. This could also be served on the breakfast table. Yummy.  You could serve with a scoop of ice cream or whipped cream. The cake is made with another favorite ingredient   Buttermilk, love baking with buttermilk.  Texture, taste of those berries are a wonderful combination.  This is a make again recipe. 

Raspberry Buttermilk Cake

1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 stick of softened butter
2/3 cup sugar and 1 1/2 Tbsp sugar to sprinkle on top
1/2 tsp vanilla
1 egg, beaten
1/2 cup buttermilk
1 cup raspberries are sprinkled over the batter and sprinkle with 1 1/2 tbsp of sugar

Mix the flour, with the softened butter until resembles crumbs. Add the remaining ingredient and mix by hand.  Pour the batter into a 9 inch round greased pan or pie plate. Sprinkle with the raspberries and then 1 1/2 tbsp of sugar. Bake at 400 degrees for about 25 minutes.
