CHOCOLATE AND PEANUT BUTTER CUPCAKES



CHOCOLATE CUPCAKES WITH PEANUT BUTTER FILLING COVERED
WITH PEANUT BUTTER ICING AND A DRIZZLE OF CHOCOLATE AND TOPPED
 WITH A MINI PEANUT BUTTER CUP




What a fun day I had making these over the top cupcakes.  I love the icing, its so creamy and smooth, taste like the Peanut Butter fudge my mother always made. These cupcakes were made this weekend for a family party.  Mr. Cliff was the decision maker on what cupcake was to be made.  I was more than willing to  make these cupcakes, Peanut Butter is a favorite and they sounded pretty yummy.  They are a keeper and will surely be making these again.  They are wicked good! 

Mr.Cliff has already put in his suggestion for the next family dinner cupcake.  Nilla wafer, yellow cake, banana cream filling in each cupcake covered with real whipped cream and a sliced banana on top.   Yeah, I think I am all over that one.................... 

I cheated, I used a box mix for the cupcakes.

This is the peanut butter filling for the cupcakes


PEANUT BUTTER FILLING   alidaskitchen



6 ounce cream cheese
1/2 cup peanut butter
1/4 cup sugar
2 TBSP milk

Place the ingredients in bowl and mix until creamy. 

Line your muffin tins with the cupcake paperS, fill each cup half full and  place a rounded TBSP of the filling on top of the batter, then add more chocolate batter and bake as directed.   





PEANUT BUTTER ICING:    thecurvycarrot       
If you are only doing a couple dozen cupcakes then I would cut the recipe in half.  It made a hugh mixing bowl of icing so I had a lot left over.  If I had made a two layer cake I would of used most of the icing.  

2 (8 ounce) blocks of cream cheese
3 cups of confectionery sugar 
2 sticks of butter, room temperature
1 cup peanut butter
1/2 tsp salt
1 tsp vanilla


CHOCOLATE SWIRL

In a small glass bowl I added about 1/3 cup of chocolate chips along with a drizzle of vegetable oil and mixed this together.  Placed in the microwave for a few seconds, then I stirred it and continued to microwave for a little longer until the chips were melted.  Allow to cool for a while, then you can either use a spoon and drizzle over the top or put some of the chocolate in a pastry bag and squeeze the swirl over the top.
